I’ve been meaning to try to make my own green smoothies ever since my New York days, when I was surrounded by so many people who seemed obsessed with green smoothies, especially with kale. I am not crazy about kale at all, but I do like baby spinach and I know there’s a whole world of baby spinach-based green smoothies out there. I just never bothered to explore it until now.
I like to have baby spinach as salad and prior to this day I had never ever tried to blend it, so I was really feeling like a novice here. Anyway, baby spinach leaves are a staple in my fridge, so I was covered. What else did I have at hand – two sad green apples that had been sitting there for a while, okay. And limes, bought to make guacamole (but then I forgot that I had ran out of frozen cilantro and hadn’t bought that so the limes were kinda jobless). All right, it was all stuff that sounded like “green smoothie material” to me, so I started searching the perfect recipe.This is how I stumbled upon this. The two-toned idea featured in the original recipe is visually appealing, but I decided I’d skip the yoghurt and just keep it green. I soon realized that only apples and leaves would probably not yield an interesting texture, so I happily embraced another ingredient that I had not initially considered and that was featured in the recipe I was reading: coconut milk. Which served also as inspiration for a nice way to turn a supposedly healthy smoothie into a sinful cocktail.The sinful green smoothie (1 portion):
- 1 green apple
- 1 generous handful of baby spinach leaves
- 2 tbsp coconut cream
- 2 tbsp cane sugar
- 1 lime, juiced
- 1 shot glass of Malibu
Peel and dice the apple, and add it to your blender jug. Add the spinach, the juice from 1 lime, the cane sugar and 2 tbsp of the thick part of canned coconut milk. I also added about 1 tsp of the liquid part for the sake of texture. Lastly, I figured that Malibu would give this smoothie the extra kick and I poured in a shot glass of it. Pulse until smooth and serve immediately.I am damned. If you’ve read so far hoping to find a healthy recipe you probably hate me now. But if you know me, you’ll also know I like using alcohol as an ingredient and I will never say no to a good cocktail. So stop frowning at the Malibu and at the sugar contained in it and enjoy the refreshing power of the sinful green smoothie. After all, all the vitamins and minerals and fibers still came at every sip.
