Noodles with lime & chili prawns

This is the chronicle of an easy yet delicious dinner. A noodle stir-fry enriched with with plump prawns, flavoured with the bite of chili and the freshness of lime juice. Nothing original, just a very refreshing main course that can potentially take very little time and leave you very satisfied. It’s what I wrapped up for dinner some time ago. I had those beautiful prawns and figured that a noodle stir-fry would have been the best way to honour them.lime-chili-prawns-noodles-1First of all, begin with the prawn marinade:

  • 350 g raw prawns
  • 1 tsp brown sugar
  • 3 tbsp soy sauce
  • 1 tbsp mirin
  • 1 1/2 lime, juiced

My prawns were defrosted and I had removed the shell from the tail. Combine the soy sauce, the brown sugar, the mirin and the lime juice in a bowl and add the prawns. Give them a stir in order to distribute the marinade all over them. Let them sit for 30 minutes.lime-chili-prawns-noodles-2Next, comes the stir-fry base:

  • 1 tbsp coconut oil
  • 3 garlic cloves
  • 1 tsp chili flakes
  • 6 spring onions
  • 3 tbsp soy sauce

Set the wok on medium heat and melt the coconut oil (if you live in a cold climate and your coconut oil is solid, that is). Finely mince the garlic and add it to the warm oil. Add the chili flakes and stir-fry. The garlic will release its flavour into the coconut oil. I like to use unrefined coconut oil because I love the subtle coconut flavour in it. The moment the smells of the flavours of coconut and garlic overwhelm the kitchen is absolutely divine. Cut up the spring onions, set the heat to high and add them to the wok, then sprinkle with soy sauce. Stir fry the spring onion for a few minutes at high heat. You don’t want to overcook it, just lightly sear it. Remove from heat when done.lime-chili-prawns-noodles-3Noodles:

  • 180 g rice noodles
  • 1 tsp salted butter
  • 2 tsp minced cilantro

At this point set a pot filled with water on the stove for the noodles. In the meantime, set another frying pan on the stove and pour in the prawns together with the marinade. Sear the prawns for a few minutes, then set aside. When the water boils, add the noodles and cook them according to instructions (it is usually a matter of just a few minutes). Drain the cooked noodles and place them in the wok. Add butter and cilantro and give it all a good stir, in order to mix the spring onions mixture and the noodles. Lastly, add the prawns.lime chili prawns noodlesTo my taste this was already good to go, but extra butter or soy sauce can be added to give this dish more flavour (this might also depend on the type of noodles used, if the outcome is a bit too dry some extra condiment could be a good idea).

This is a really healthy treat and with this post I hope to inspire my friends to try to make this delicious meal because it’s simple, fast and incredibly pleasant. The yield here was two portions, if eaten as main and only course, which was our case.
