Mini choco-cinnamon muffins

I have recently started a Swedish language course that’s being offered at my workplace, and of course, being it about Swedish culture as well, it includes the sacred 10 minutes devoted to coffee and something sweet, fika. I offered to bring the sweets myself, and last week I attended the language lesson with a tray of mini muffins that I have infused with one of Sweden’s key flavours: cinnamon.

mini-cinnamon-muffins-02Instead of making regular-sized muffins, I thought it would be nice to have tiny bite-sized treats and chose to use the mini muffin tin. The recipe I used yields 12 regular-sized muffins; when divided in the smaller moulds I got more than double mini muffins. This is a very nice cheat when you want to serve many people but you don’t really have large amounts of ingredients. Only the very hungry will go for a second or third cake, and even those who only want to sample the dessert but wouldn’t feel like having a whole big muffin will yield to the temptation of taking a smaller one. I thought this option was perfect for my language course fika, and it was.

Choco-cinnamon muffins:

  • 220 g flour
  • 1 tbsp cocoa powder
  • 1 tsp ground cinnamon
  • 1/4 tsp crushed vanilla bean
  • 160 6 sugar
  • 2 tsp baking powder
  • 250 ml milk
  • 1 egg
  • 60 g vegetable oil

Preheat the oven to 170°C. Combine all dry ingredients in a bowl (flour, sugar, cocoa, cinnamon, vanilla and baking powder) and set aside. In another bowl, crack the egg and mix it with the milk. Lightly whisk this mixture with a fork, then add the oil and whisk some more. Pour this mixture in the other bowl and combine it with the dry ingredients. Mix gently with a spatula until homogeneous.

Line a muffin tin with paper moulds and spoon even amounts of mixture onto each mould. I only own one mini muffin tin, so I baked all my batter in three batches. Bake for about 10 minutes at 170°C. To enjoy their taste at its best, let muffins cool to room temperature before serving.

I had been writing this blog for a few months when I got it, and this gift had been especially chosen to be featured in my blog, as I was told while I unwrapped it back in December. Ever since I moved in to my new apartment, I appointed this tray as the official stand where I keep my olive oil and Balsamico bottles on, so I never really used it for cakes. Until I baked these mini muffins and decided to serve them next to a huge latte. The time for this tray to be finally featured in this blog had come.
