Among the perks of living in Sweden there is cheap salmon found at every grocery store. Maybe not as cheap as I used to find it on a regular basis in neighbouring Norway, but still shamefully cheap compared to other countries. And it comes straight from neighbouring Norway, so it can be considered a local good. Another wonderful thing is that Sweden has been quite engaged in multiculturalization, so a lot of food-related products from different traditions can be foud as easily. In comparison to Italy and Poland, I’m always happy to acknowledge that at my local Swedish supermarket I can find items that elsewhere I would have found only in specialty stores.
Sushi rice, for example. And rice vinegar to season it. Nori seaweed sheets. And well, add good old salmon to your grocery list and an avocado, which is sold year-round, and you can have home-made sushi for lunch after just one quick trip to the store across the street. A cheap alternative could be a sushi kit which contains the amount of rice, vinegar and seaweeds you need for one meal. I bought one on promotion and spent around 7€. I only needed to add one avocado (1€) and a piece of salmon (5€ for a 500 g package, I only used one small fillet, so 1€). When making home-made sushi it is best to use thawed frozen salmon, rather than fresh one, unless one has access to a blast chiller. Thoroughly dried with paper towels after defrosting it will work just fine.
And this is how I made sushi for 2 with less than 10€. (Sushi for 2 means four rolls, for which I used the whole avocado and salmon fillet. The pictures were taken halfway through the preparation, but really there was enough for 2 + some leftovers.)
