Strawberry cheesecake smoothie

Warning: this is not a healthy smoothie. If you’ve come here for a healthy treat, you will be disappointed. On the contrary, if you’re looking for a luscious alternative dessert and what you have in mind is strawberry cheesecake that you can drink through a straw, you may have found the right place. Because that’s exactly what my strawberry cheesecake smoothie is all about. It has all the guilty pleasure of a piece of cake, but it comes in the form of a smoothie.

This is not a healthy smoothie. This strawberry cheesecake smoothie is like a strawberry cheesecake that you can drink with a straw.

Cheesecake is one of my favourite cakes. I just love the texture of cream cheese and I love it when it’s sweetened. And then of course there’s the buttery biscuit base that is just pure bliss. I love cheesecake in any flavour, from a basic simple cheesecake that just tastes like cheese and vanilla, to chocolate cheesecake, to all the possible fruity cheesecakes – you name it.

Strawberry cheesecake is one of my favourites. Strawberries are probably my number one favourite fruit and when strawberry season comes I just go crazy. If I have to choose one type of jam to my waffles I’ll always go with strawberry. Smoothies are no exception, and while I often like to have a simple strawberry banana combination, sometimes I may as well just treat myself and do only strawberries with a little bit of cream and sugar in. Total bliss.

This is where this strawberry cheesecake smoothie originates. A lovely blend of fresh strawberries, cream cheese, sugar and whipping cream, just like in strawberry cheesecake. To make it even more legit I like to feature the biscuit base as decoration on top. Remember: this is not a healthy smoothie. This strawberry cheesecake smoothie is a legit dessert.

How to make strawberry cheesecake smoothie

To make this strawberry cheesecake smoothie you need to combine fresh strawberries, full fat cream cheese, whipping cream and sugar and blend all until smooth. The strawberries will release some juice when blended, so the texture will be quite runny. You can either add all to a blender jug, or use a hand blender, the chioce is yours. As long as you blend it until the strawberry chunk has disappeared.

You coud be content now and could want to enjoy your strawberry cheesecake as it is, but I recommend to hold your horse and take care of the crumbly top before you declare your smoothie complete. Crush 2 Digestive biscuits, melt a teaspoon of butter and combine. Pour your strawberry cheesecake smoothie in a glass and garnish with the biscuit base top.

Do I really have to use butter in my smoothie? Well, technically the butter is not blended in the smoothie but it’s used to flavour the crushed biscuits. You may skip it if you wish, but to me it’s the butter what makes a cheesecake base special.

Do I really have to use sugar in my smoothie? I recommend using a little sugar to contrast the salty notes of the cream cheese. If your strawberries are ridiculously ripe and sweet you may reduce the amount if you really feel like you want to cut on some sugar, but I wouldn’t remove it all.

And once again, put aside the thought that smoothies are healthy stuff and think of this strawberry cheesecake smoothie as liquid cake. That’s what it is. Dessert.

I decided to photograph this strawberry cheesecake smoothie in a single large glass and then feasted on it when the photo shoot was done. After that, I can definitely confirm that this yield is 2 portions. While it nicely fills a large glass, this is definitely a filling serving if enjoyed by one person. Not going to say this is not a good idea, but if having this as dessert after a full meal I’d recommend sharing it with a friend.

If you want to enjoy this on your own this makes for a great guilty afternoon treat in between meals.

Ingredients

  • 200 g fresh strawberries
  • 150 g cream cheese
  • 30 ml whipping cream
  • 45 g sugar
  • 2 Digestive biscuits
  • 10 g butter

Instructions

  • Chop the strawberries and combine them with the cream cheese, whipping cream and sugar. Blend until smooth.
  • Crush the Digestive biscuits. Melt the butter and add to crushed biscuits.
  • Pour the smoothie into a glass and garnish with buttered biscuit crumble.

Notes

This recipe yields two portions if served as dessert. You may as well have it all alone and serve it in a larger glass (like it is presented in this photo shoot). If enjoyed alone, please notice that this smoothie is very filling and might be too much after a meal.
