  • 6 cl rhubarb syrup
  • 3 cl gin
  • 10 cl tonic water
  • 1 lemon slice
  • 1 rhubarb stalk
  • ice cubes


  • Fill a highball or balloon glass half full with ice cubes. Pour in the rhubarb syrup and the gin. Top with tonic water. Garnish with a slice of lemon and a rhubarb stalk.


The use of rhubarb-infused gin or rhubarb tonic water is nice but not mandatory. The rhubarb flavour is mostly supplied by the syrup so regular gin and tonic water will also deliver a great taste.
