Mortadella pizza with pistachio and burrata

Mortadella pizza bianca has become increasingly popular outside of Italy. Mortadella pizza with pistachio and burrata has almost become a gourmet thing. The good thing is that you can easily make this exceptionally delicious pizza at home. Sure, the ingredients might be on the pricier side, but making it at home makes it cheaper anyway than getting it at a restaurant.

So for this week's restaurant experience at home, we're making gourmet pizza. I remember that mortadella was not easy to come by when I came to Sweden in 2012. Burrata in supermarket didn't even exist up until 2018 or something (at least where I live, which is not Stockholm). But now these ingredients are available and I like to enjoy them from time to time.

The secret to a good pizza is not only the premium ingredients on it, but the dough. If you don't like to make your own, there are fresh pizza doughs that are commercially available and that are really nice. But I like to make my dough, I like it when it's nicely salty, and the end product is just so, so nice.

Ingredients and equipment

  • Pizza dough - here's my homemade pizza dough recipe
  • Mozzarella - if using a fresh mozzarella ball, remember to place it on a colander after shredding to drain
  • Mortadella - either with pistachios (extra pistachios!) or plain
  • Chopped pistachios
  • Burrata
  • Olive oil

You will need the equipment you normally use for making pizza at home. Do you have a designated oven, or the house oven? Do you use a pan or a stone? I like to do both, depending on how I feel that day. This time I used a pan, which was rectangular, but I made a round pizza on it anyway.

How to make mortadella pizza with pistachios

1. Stretch pizza dough to desired thickness. Lightly brush with olive oil and top with shredded mozzarella. Bake in the lower part of the pre-heated oven at 230°C (480°F) for 8-10 minutes or until the sides and cheese have nicely browned.

2. Take the pizza out of the oven and immediately top it with nicely folded slices of mortadella. Tear the burrata and divide all over the pizza. Lastly, sprinkle the chopped pistachios, I like to add them here and there rather than sprinkling them evenly all over.

Mortadella pizza tips

If you're using a pizza pan, make sure to spread some olive oil on it before you place the stretched dough onto it. If you are using a pizza stone, remember to add some semolina (or polenta) on the pizza peel so your pizza will slide more easily.

Got leftovers? The best way to reheat pizza is in a skillet! Warm up a splash of (vegetable) oil and as soon as it's hot, lower the heat to minimum and add the pizza. Cover with a lid - this will trap the steam, nicely warming the top. As for the bottom, it will get a nice crispy finish. Just make sure it des not burn: keep an eye on it from time to time and remove when it has reached the desired temperature.

If you have a good store-bought pizza dough, feel free to use that. An alternative is to use this topping on a pinsa, nowadays they're very popular to find in stores.
